All ages. Teens, children, adults. Families welcome. Restaurant on Mars is an edible experiment about the future of food and belonging. We’ll imagine what a restaurant on Mars might serve to feed everyone. Starting with rice and beans, adding vegetables and awesome sauce for a communal bowl of bibimbap!  Every participant will taste, create, and take home a food they individually make. Through sensory storytelling and shared food making, participants reimagine what it means to nourish ourselves and each other on Earth, Mars, and beyond.  Space is limited to 20. También es cofundadora y directora ejecutiva de Alimentando al Pueblo, una organización sin fines de lucro que recibió el Premio Héroe Cotidiano MOHAI en 2022. Se graduó de Highline High School y de la Universidad de Washington, y se considera por siempre una estudiante de las calles y de la vida. Fue reconocida como una de las Héroes Locales 2020 por The Seattle Times, Ciudadana del Año de Burien 2021, y como Seattle Kraken Héroe de las Profundidades. María Castro, MS, RD, es una dietista registrada, nacida en Colombia y criada en Estados Unidos, que encarna ambas culturas. Su filosofía no se basa en dietas, tiene un enfoque inclusivo respecto al peso y se fundamenta en la alimentación intuitiva: considera que los alimentos tradicionales no son el problema, sino parte de la solución. Ayuda a las personas a redefinir su relación con la comida de una manera que honre su cultura, su cuerpo y su vida cotidiana, mientras manejan condiciones crónicas. --  Join Roxana Pardo Garcia, Executive Director of Alimentando Al Pueblo, and Maria Castro, Registered Dietitian from Your Latina Nutrition, as they talk about the release of their new cookbook and exposing the lies diet culture creates about Latin American food being “unhealthy.” Free cookbooks available at the event while supplies last.  Doors open at 5:45pm. Please register. -- Roxana Pardo Garcia aka La Roxay is a self-identifying Hood Intellectual Xingona who was born and raised on occupied Coast Salish Territory. Roxana is the Certified Xingona, Founder, and Cultural Worker of two small businesses, La Roxay Productions and Hood Intellectual Xingona. She is also the Co-Founder and Executive Director of Alimentando al Pueblo, a nonprofit that won a 2022 MOHAI Everyday Hero Award. She is a graduate of Highline High School, the University of Washington, and forever a student of these streets and life. She was named one of Seattle Times 2020 Local Heroes, 2021 Burien Citizen of the Year and a Seattle Kraken Hero of the Deep. Maria Castro, MS, RD, is a Colombian-born, U.S.-raised registered dietitian who embodies both cultures. Her philosophy is non-diet, weight-inclusive, and based on intuitive eating—she sees traditional foods not as the problem but as part of the solution. She helps people redefine their relationship with food that honors their culture, their body, and their daily life while managing chronic conditions.
